DGF Ovens: Perfect for Baking Classic Scones

The classic English product, scones, is baked all over England, primarily using DGF (Direct Gas Fired) ovens. The remarkable intensity of heat generated in this type of oven, combined with the elevated moisture levels within the baking chamber, renders it exceptionally well-suited for baking scones.

Typically, scones are baked on solid steel bands. Given the relatively high fat content in the product dough itself, the application of band greasing is usually unnecessary.
